Healthy Eating Recipe’s

We all know the importance of eating healthy. What we put into our bodies is what we get out of them. By eating properly and exercising, we will have more energy doing the things we love to do, and we won’t have to depend on medications later on in life. With farmer’s markets out there and the ability to share healthy recipes, we can all make better choices, and learn that eating healthy is not only beneficial to our health, but it can be tasty too with some added flava, and it doesn’t have to cost us a lot of money. We just need the right resources for buying, and to learn different ways of cooking. And above all else, we do know for certain that we always have the ability to pray over our food, by thanking God for our food and asking Him to bless it before we eat it…  All in the name of Jesus. Amen!


Spaghetti Squash Alfredo with Broccoli 
(Dinner for 4-5 people)
1 – Spaghetti squash (cut in half long ways and using both halves for this recipe) 
2 – Small bunches of broccoli
1 – Jar of favorite Alfredo sauce
Salt, pepper, garlic powder
Parmesan Cheese (lots of it!)
Preheat oven to 350 degrees. Remove the seeds inside the squash and run it under cold water cleaning it up, make sure that there is no excess water, and then rub the inside of the squash with olive oil. Sprinkle with salt, pepper and garlic powder. Place the squash in a baking dish and bake for 45 minutes. While squash is baking, steam broccoli and warm up the Alfredo sauce in a separate sauce pan on the stove. When squash is done cooking, let cool for about 5 minutes and then scrape the insides to get the spaghetti looking squash out and into a serving bowl. Add the Alfredo sauce on top of the squash and stir, then add the broccoli on top of it all and add
Parmesan Cheese. And there you have it. Enjoy this delicious spaghetti squash Alfredo with broccoli dish. (May add chicken or shrimp as well)

 Kale and Spinach Salad 
Sauté kale and spinach with olive oil, salt and pepper.       
Slice avocado, cucumbers and tomatoes, and add salt, pepper, garlic powder and squeeze fresh lemon juice over top of it. Add kale and spinach to this salad and enjoy all the delicious flavors.
Also as shown in this picture you can sauté kale and tomatoes and add that to the cucumber, avocado recipe above. It’s all delicious.

Eggs Over-Easy with Veggies – Great after a good workout!
3 – Eggs
1 – Tbsp Olive oil, butter or margarine
1 – Handful of Spinach                                        
1 – Handful of Kale
10 – slices of Mushrooms
1/4 cup chopped Onions
5 – sliced Black Olives
5 – sliced Green Olives
1/4 cup cheddar cheese (optional)
Cook eggs over easy in olive oil, butter or margarine in iron skillet or frying pan, melt cheese on top.
Sauté kale, spinach, mushrooms, onions, black olives, green olives in olive oil. Spoon veggie mixture over top of eggs, and add a side of wheat toast. Yummy!

Homemade Kale Chips –

2 – Bunches of Kale

Pinch of Sea Salt

Fresh cracked black pepper

Olive Oil

Preheat oven to 300°.  Cut Kale into cracker sized pieces (remove the stems).  Place onto cookie sheet and drizzle Olive Oil (extra virgin) all over them.  Add a pinch of the Sea Salt (actually to desired taste) and crack the black pepper over the kale.  Place into oven for approximately 15 minutes.  For crispier chips increase time to 20 minutes.  Ovens vary in heat and cooking intensity so you really have to watch them so they do not burn.

Baked Broccoli –

Another quick, easy and delicious way to enjoy some tasty broccoli!

2 bunches of broccoli

Olive oil

Lemon pepper

Separate broccoli into sections. Place broccoli on a cookie sheet. Drizzle olive oil over broccoli and sprinkle it with lemon pepper. Bake at 325 degrees for about 15 minutes. Remove from oven and enjoy this healthy and tasty snack. 🙂


Avocado Cucumber Kale Salad –

Try this delicious avocado, cucumber, tomato & kale salad!

1 Avocado (peeled and sliced)

1 Cucumber (peeled and sliced)

8 Cherry Tomatoes (cut in halves)

3 stalks of Kale

1 Lemon

Oregano, Salt, Pepper, Garlic Powder

Add avocado slices, cucumber slices, cherry tomatoes, and leaves of kale stripped from the stalk. Place all ingredients in a bowl and add oregano, salt, pepper and garlic powder and squeeze entire lemon on top of it all. Enjoy this delicious salad recipe! 🙂
